Watermelon Sorbet
2015-01-09Light, refreshing, and a healthier option than ice cream, sorbet is a cool burst of bright flavor.
Ingredients
All ingredients listed will fit into a 2-quart ice cream maker*
- 1 ½ cups water
- ¾ cup sugar
- 2 cups seedless, chopped watermelon (rind removed)
- 1/3 cup lime juice
*Amounts may be adjusted based on size of ice cream maker.
Instructions
Step 1
Heat water in microwave safe glass bowl until almost boiling.
Step 2
Add sugar and stir until dissolved completely. If water is hot enough, this should only take seconds.
Step 3
Allow mixture to cool.
Step 4
Add water/sugar mixture and chopped watermelon to blender and blend until smooth.
Step 5
Remove from blender; put into container with lid.
Step 6
Stir in lime juice.
Step 7
Cover and chill for a minimum of 2 hours.
Step 8
Pour mix into ice cream maker and follow manufacturer’s instructions. May be returned to freezer to thicken to desired consistency.
Step 9
Scoop and serve.
